      • Hot holder measuring 48 degrees, increased temperature and up to 65 during inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There are some missing ceiling tiles in the kitchen. As well a build up of dust and debris on ceilingReplace missing ceiling tiles and clean other ceiling areas.

      • 1. There is an accumulation of dust ceiling ventilation2. There is an accumulation of grease on the floors near fryers. Clean above noted areas.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Rice in the rice cooker was being kept at a temperature of 40 degrees Celsius. Rice was moved to a container and into the walk-in cooler for proper cooling. Ensure that rice is either held at a temperature greater than 60 degrees Celsius or cooled to be reheated to 74 degrees Celsius when served.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • 1. The staff bathroom hand sink does not have paper towel in a dispenser/holder. Ensure that single use paper towel is available at all times, and in a holder/dispenser. 2. The bar hand sink is being used for purposes other than hand washing, and used glasses were stored in the sink.Ensure that hand washing sinks are used for the purposes of handwashing only.

      • There are some missing ceiling tiles in the kitchen. Replace missing ceiling tiles.

      • A counter in the bar behind the hand sink was missing its finishing and was not smooth, non-porous and easy to clean. Ensure that all surfaces are in good repair, smooth, non-porous and easy to clean.

      • There was an accumulation of food debris on the back of the meat slicer and the guard.Ensure that the entire meat sliver is dismantled, cleaned and sanitized between use.

      • 1. There is an accumulation of dust on the fan cover of the alcohol walk in cooler. 2. There is debris from a previous water staining behind the ice machine in the server prep area.Clean and sanitize areas noted above.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No - monthly pest control records were now available from Abell Pest Control on-site for review (including recent service August 29th). Also, as previously indicated, the operator is to clean and sanitize the affected floor areas, including removal of the remaining twenty+ (20+) mouse droppings in the rear storage room.Also, operator is to ensure there are no rodent entry points and to examine the rear exit door and weather-stripping, adjacent baseboard structures, and the process during open-door deliveries, to prevent rodent entry at that time. Repair of damaged baseboard structures is necessary.

      • No - the operator is to ensure all storage rooms are cleaned and organized, to allow for ease of inspection and cleaning. Note that there were still remaining rodent (mouse) droppings in the rear miscellaneous items storage room, adjacent to the rear exit door.Cleaning duties must be clearly communicated between pest control operator and staff, to ensure this responsibility is not overlooked.

      • No - there was evidence and observation of continued pest activity and no sustained mitigation and pest control to eliminate the rodent (mouse) issue. The operator is to ensure the services of a licensed pest control company are contracted to investigate and take all necessary measures to eradiate the rodent (mouse) problem.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No - there were no monthly pest control records available on-site for review (contract service is apparently conducted by a licensed pest control company). Also, there were two (2) dead mice in rodent traps at the rear exit door corridor and in the adjacent miscellaneous storage room area (along with twenty mouse (20) droppings). Note the one dead mouse in the storage room area was highly desiccated and the other dead mouse at rear exit door was 'relatively fresh'. Operator is to remove the dead mice and droppings, and clean and sanitize the affected floor areas. Operator is to ensure there are no rodent entry points and to examine the rear exit door and weather-stripping, adjacent baseboard structures, and the process during open-door deliveries, to prevent rodent entry at that time.

      • Yes (corrected during inspection) - the Food Handling Permit was not initially displayed in the public area, but was then printed and posted in a conspicuous location on the side wall at the customer seating area, visible to all entering public. The expiry date is October 31, 2024.

      • A single use cup was being used as a scoop and stored directly in bulk food item.Use scoops with a handle and store in a way that protects bulk Food from contamination.

      • Garlic in oil was being stored at room temperature. - Container was discarded. - Garlic in oil must be stored at temperatures less than 4 degrees Celsius or greater than 60 degrees Celsius at all times.

      • There was an accumulation of food debris on the back of the meat slicer blade and guard.Ensure that meat slicer is fully cleaned and sanitized and the blade is removed.
