      • Hot holding display case:Chicken fingers @ 58.2 degrees C. Whole chicken @ 58.2 degrees C. Potatoe wedges @ 55.0 degrees C. Reheat to 74 degrees C before serving or hot holding.Store all hot perishable foods at 60 degrees C . or higher.

      • No probe thermometer or thermal stickers to verify that the pot washer meets sanitizing temperature.Provide a waterproof high temperature thermometer or thermal stickers.

      • 1) Sticker residues were observed on scales and shelves.2) Debris build-up underneath walk-in freezer shelves by the hot food station. 1 to 2) Clean these areas.

      • 1) Observed a gap alongside the bottom or in between the exit doors at compactor and pharmacy emergency exits.2) Observed a buildup of dried food residue and waste around the compactor/garbage areas. a. Please continue with the current pest control services. b. seal all potential entry points. c. Clean and maintain clean the garbage and compactor areas.

      • 1) Rodent droppings observed under snack isle and wet wall. 2) Observed a gap alongside the bottom or in between the exit doors at omni area, compactor emergency exit.3) Observed a buildup of dried food residue and waste around the compactor/garbage areas. a. Increase the level of services of a professional pest control company to eliminate the rodents from the facility including mass-trapping services and implement an ongoing integrated pest management program for the interior and exterior the food establishment. b. Clean and disinfect all surfaces where droppings were observed.c. Assess food and food containers. Discard all foods contaminated by mice.d. Assess all potential entry points and ensure that conditions that allow for the entry and of pests do not exist.e. Assess all potential harborage sites including the bunkers below the coolers and floor drainage holes below the wet wall and ensure that conditions that allow for pest harborage do not exist.f. Clean and maintain clean the garbage and compactor areas. g. Store all foods with softer plastic/paper packing on higher shelves. h. Provide documentation from the professional pest control company to an Alberta Health Services Public Health Inspector, indicating that pests have been eliminated.

      • Observed a water leak in the omni room. - Investigate the source of the leak and address the issue.

      • A gap was observed alongside the bottom of the back receiving door. - Please replace door sweep and seal the gap to prevent the entry of pests into the facility.

      • The ventilation unit in the bakery/sushi area has buildup of oil and grease on the grease filters. Please clean the filters, and regularly monitor them to clean when grease begins to buildup.
