      • Several holes in the flooring of the bakery were noted beside the oven. Staff indicated that this area had previous stored a proofing unit. Fill in holes to ensure a smooth and easily cleanable surface.

      • The sanitizer in the three-compartment sink closest to the chicken cooking area was measured at a concentration of 400-500ppm quats. Lower the level of sanitizer used in this compartment sink to sanitize dishes. Contact your chemical supplier to reduce the concentration of quats to 200-300ppm. Ensure sanitizer is being monitored on a regular basis to detect anomalous concentrations.
