      • Testing equipment for monitoring the high temperature dishwasher and glasswasher was not available.Provide testing equipment such as a probe thermometer with a maximum registering function. Monitor the dishwashers at plate level daily and ensure that the sanitizing temperature reaches at least 71C.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There was no cold water at the hand sink in the server area.The issue was addressed by a contractor during the inspection. Hot and cold running water was available at the sink.
