- 1. Mayonnaise, cheese and bacon were being stored at room temperature. If leaving potentially hazardous foods at room temperature, they must be timed and used within the 2-hour time window. Alternatively, foods can be stored in enough ice to maintain 4 C. 2. The fridge was holding at 13-14 C. Items stored near the top may have been impeding air flow and door had been opened. Temperature dropped within a half hour and some items were moved to increase air flow.Ensure all potentially hazardous foods are stored at or below 4 C or timed and discarded after 2 hours at room temperature. Ensure the fridge is maintaining 4 C or colder.

- The mobile food unit was operating without any hot or cold potable water coming from the 2-compartment sink at the time of inspection.- Operator temporarily closed the mobile unit. Hot/cold water was restored to the 2-compartment sink.
