- Cartons of ungraded eggs were in the standup cooler. Owner states for personal use only.- Ensure ungraded eggs are not present in permitted food facility and not used in food products sold to the public.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The temperature of the standup cooler was unsatisfactory at 10.3 degrees Celsius- High risk foods moved from cooler to walk-in cooler with satisfactory temperature <4 degrees Celsius- Cooler unplugged and not be used until it can maintain temperature of 4 degrees Celsius or colder- If unit is in use, it must be part of daily temperature monitoring and documentation
