    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The two coolers were both initially providing interior storage temperatures of 7.4C at the beginning of the inspection. Both units were initially set to temperatures of 40F and 4C, which are the same. The temperature settings on the units were lowered to 38F and 2C respectively, and after 5 minutes the interior temperature of both units fell below 4C as verified using an infrared thermometer.
