      • The TRUE cooler next to the grill line was 9C.
    • 15. Is the facility free of a pest infestation?
      • Mouse droppings were observed under the dishwasher. A recent pest control report indicated there was mouse activity in the building over the winter months. Traps and baiting stations are set in place. Please clean up the droppings and continue to monitor for new activity.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The floor in the walk-in cooler is not in good repair. The flooring is beginning to lift and the caulking needs to be replaced. Ensure the floor is smooth and easily cleanable.

      • A used cloth was on the prep counter. If you are using cloths to wipe food contact surfaces, they must be stored in sanitizer when not in use. The cloth was moved during inspection.

      • Ceilings and walls in the storage area are composed of exposed wood. Please ensure that walls and ceilings are made up of material that is non-porous, and is easily cleanable. Please ensure the exposed wood is covered or painted over.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A wire strainer was in disrepair. Operator immediately threw away the equipment.

      • There was a build-up of grime on the can opener.There was a build-up of grime on the fry cutter. Please ensure that the indicated areas are cleaned and sanitized and maintained in clean and sanitary manner to prevent cross-contamination from occurring.

      • Dishwasher temperature initially measured was 66 degree Celsius. This was corrected during the inspection. Dishwasher was run twice to achieve a corrected temperature of 76.1 degree Celsius. Dishwasher temperature must be maintained at 71 degree Celsius or higher.

      • Ceilings and walls in the storage area are composed of exposed wood. Please ensure that walls and ceilings are made up of material that is non-porous, and is easily cleanable. Please ensure the exposed wood is covered or painted over.

      • Dishwasher temperature was 55 degree Celsius. This was corrected during the inspection. Corrected temperature was 71.2 degree Celsius.

      • Mice feces were observed in the storage area. Please ensure this is cleaned up to prevent contamination of food.
