      • Observation (CORRECTED DURING INSPECTION): Contents inside the undercounter milk cooler (milk, oat milk, etc.) at being held above 4 degrees Celsius. Current temperature inside cooler is ~12 degrees Celsius.
      • Corrective Action(s): Potentially-hazardous foods must be held at temperatures of 4 degrees Celsius (or colder) to maintain food safety. Operator directed to transfer all potentially-hazardous foods to other coolers until the unit can be recalibrated/repaired and maintain foods at safe temperatures.

      • 2) Contact a professional pest control company to conduct a thorough inspection of the premises for pest activity and replace the old sticky traps with new ones.

      • Observation:
      • Found fruit flies and drain flies in the back area and around the syrup station. Fly strips are present, but ineffective.
      • Corrective Action(s):
      • Daily cleaning (wash with hot water & soap, rinse with hot water) of these areas and all food storage areas and food quipment must be done. Removing pooling and/or leaking water will also help eliminate the fly problem.

      • Observation:
      • There is pooling water under the floor mats, under the dishwasher, and under the mop sink. There is accumulated syrup on the dispensing bottles and wire holders. These conditions will attract and breed pests.
      • Corrective Action(s):
      • Mop up the pooling water throughout the day and especially at night. Wash the outside of syrup bottles and the wire holders every night to remove any spilt food. Lift up floor mats every night to mop and clean the floor. Do not place the mats back on the floor, allow the floor and mats to dry over night.

      • Observation:
      • 1) There is accumulated dust, food, and cobwebs on the walls; sink; cupboards; shelves; door tracks of the display cooler; interior shelves of coolers; exterior surfaces of equipment (dishwasher, freezer & fridge doors) and food containers; and along the base of walls and equipment. This will attract pests.
      • 2) Wiping cloths are being stored on the counter. Cloths will allow germs to live on it when left on the counter. Using such cloths will spread more germs around.
      • Corrective Action(s):
      • 1) A thorough cleaning, from top to bottom, of the whole premises requies to be done. Use hot water and soap to remove all the food and dust, then wipe the soapy water off with clean hot water, and then spray with sanitize to kill germs. Ensure all surfaces and areas are cleaned on a regular basis this way (daily, weekly, bi-monthly, monthly, etc.).
      • **Correction date: Sept. 30/19**
      • 2) All cloths MUST be stored (fully covered) in a bucket/container of sanitizer to kill germs. The sanitizer must be changed every 2 hours. Sanitizer in spray bottles MUST be changed every day with new sanitizer as the strength decreases. At time of the inspection, the cloths were placed in sanitizer and new sanitizer was placed in the spray bottles.

      • Observation:
      • Raw wood platform for the mop sink to sit on, and the raw wood frame for the dishwasher door to sit on is not sealed or cleanable. The wood will absorb water and food, which will attract and harbor pests.
      • Corrective Action(s):
      • Paint all raw wood surfaces, and/or replace with more durable, sealed, smooth and cleanable material (plastic, stainless steel).

      • Observation:
      • 1) The 2-comp sink, in the back, has a constantly running faucet. The owner is aware of this and has contracted a plumber, who is looking for a replacement faucet. The constantly moist environment, will attract and harbor pests.
      • 2) The dishwasher is leaking water. The water is pooling under the machine and floor mats, and it's createing an environment which pests like.
      • 3) The black cooler, below the Espresso machine, has a broken door seal. Cold air will constantly leak out, allowing food product to get warm inside the cooler.
      • Corrective Action(s):
      • 1) Repair or replace the faucet so water can be completely turned on/off with the taps. Until this is done, staff are turning the water off at the shut-off valves at night.

      • 2) Repair or replace the dishwasher so it no longer leaks. Have the machine maintenanced to ensure it is running as per manufacturer's specifications (wash & rinse cycle times and temperatures).
