      • ***Food safety records were not being kept. There was no record of the cooler or freezer temperatures or the surface sanitizer concentration or the dishwasher final rinse temperatures. Another template for record keeping was provided.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • ***Pest control Records had not been received and were not available onsite at this time.

      • ***Food safety records were not being kept. They were using a stand alone hot holding thermometer to check the dishwasher, a working thermometer in the refrigerator, and chlorine test strips for checking the sanitizer concentration but they were not documenting the information. Sample template was provided.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Operator was educated as to proper sanitizing procedures for food contact surfaces during the inspection and used the 100ppm chlorine solution to sanitize the cutting board.
