- Observation: Most of the facility is well maintained and in sanitary condition.
- **Grout line along walls under the dish pit, prep sink/beverage syrups station, mop sink and employee washroom observed wet and subject to build up of a biomat in the grout line. The mop sink basin looks like it has a similar build up.
- Corrective Action(s): Target the above areas for additional mopping, including dry mop to reduce wettness. Floor cleaner chemical may be availabe for more aggressive control of biomat may be available as discussed.

- Observation: Areas of the food premises that could benefit from more cleaning and where food debris or other noted:
- -Men's washroom and mop sink area. Due to floor contour mop water tends to migrate into corners of mop sink room and men's employee washroom. Sludgy build-up noted along grout work in these two areas;
- -Corners of hard to reach areas and beside or behind some equipment.
- Corrective Action(s): Target mop room and men's washroom with increased cleaning (and drying with dry mop) to combat water pooling events. Actively spray with chemicals to kill the biomat formations in the grout work. Probably needs to be done daily.

- Observation: Observed ponding water along the wall under double sink/beverage syrups area, around the mop sink station and throughout the male employees washroom. This water is mixing with food debris resulting in the formation of biomat slimes along the walls in the identified areas, especially in the grooves of the tile grout spaces. This issue has been noted in previous inspections and is particularly bad today. In addition to unsanitary, this could lead to the breeding of pests like drain or fruit flies.
- Corrective Action(s): These areas need thourough clean up and removal of accumulating biomats in the floor tile. All excess water ponding on floor must be removed immediately after spills and scheduled floor cleaning. An additional drying step to the clean up process in these areas may help. Recommend adding a dry mop step to the cleaning process in these areas as discussed.
- **Once clean up is completed send pictures to my office for review. Please do so within a week from date of inspection.

- Observation: Two areas noted with accumulations of stagnant water and development of biomat/slimes:
- A) below double sinks next to beverage syrups station and CO2 cylanders;
- B) Area around and leading from mop trough to "mens" washroom via grout lines in tile floor and extending behind the toilet.
- Corrective Action(s): Improve cleaning by increasing frequency and quality of cleaning floor into men's staff washroom. Regularly apply sanitizing chemicals to affected area to reduce growth potential of biomat. Try to dry mop the floor in area as means to reduce stagnant water build up.
- **Recommend removing "men's" sign to this room, make it unisex to increase use of this washroom and staff may take more responsibility for it.

- Observation: Minor accumulation of waste water observed stagnating behind pop syrup shelves, around mop sink and extending into the men's (employee) washroom.
- Corrective Action(s): Clean up the accumulation of water in all areas of premises, but especially in dish pit, mop sink and behind noted shelves in the area. Do not allow water to remain/pond in the noted areas. Ensure night crew advised and this area is audited daily for clean up and water accumulations.

- Observation: Observed a significant accumulation of water on floor of men's employee washroom.
- Corrective Action(s): Discussed with manager. Residual from night/morning crew clean-up. Forgotten and never checked. Operator to mark this washroom 'out of order' until clean up crew can get to it. OK.
- **If water persists, may be broken toilet seal and will need repair. If so isolate this area until repair made and ensure to disinfect contaminated area as "biohazard" at 1 part bleach to 10 parts water (or equivalent).
