- Clean in place cloth buckets on food prep floor was tested below 50ppm. Operator remade solutions and tested with test strips that were available. and not expired. Please ensure all clean in place clothes used are stored in 200ppm Quats, confirmed with test strips.

- Beef hamburger patties were observed thawing in the sink under warm running water. The operator explained this process is used for 30 minutes to reduce the burgers' fat content.Thawing procedures must be conducted either in a refrigerator below 4°C or under cool running water only. Using warm or hot water increases the risk of pathogen growth.

- The back door has a door sweep; however, the bottom corner on the opening side is beginning to peel back, creating a small gap.Please ensure the door sweep is repaired so that no light is visible through the opening from inside the building, preventing potential pest entry.

- The bacon strips in the hot holding unit were not maintaining at above 60 degrees C. Temperature was measured at 57 degrees C. Staff complied to re-distribute other bacon strips to other containers in the hot holding unit. Temperature was re-checked and at 63 degrees C. -Please ensure to avoid stacking too much bacon strips in deep containers and distribute them evenly in other containers. Please monitor closely. Overall, all other temperature regulated holding units were within acceptable safe temperature range. Freezer at below -18 degrees C, hot holding units above 60 degrees and cold holding units below 2.8 degrees C.
