      • Observation (CORRECTED DURING INSPECTION): One of the prep reach-in coolers (closest to drive-thru window) was noted with an air temperature of 15.6C. Cold potentially hazardous items were measured at around 11.0C.
      • Corrective Action(s): Cold potentially hazardous food stored within this refrigeration unit (4 x 237 mL milk and 10 x individual apple juice and orange juice) were discarded during the inspection.
      • There were some cold potentially hazardous food on the top cold rail that were measured over 4.0C. The top rail was not overfilled and not much ingredients were left in each containers due to the lunch rush. As per Manager, food was brought to this refrigeration unit at around 10:30 AM. Told Manager to discard any leftover food in the top cold rail before 2:30 PM - Manager agrees. Reviewed the temperature log for this unit for this morning and yesterday, no issues were noted when the temperatures were taken during those times.

      • Manager is to monitor this unit's temperature. If it is able to maintain at 4.0C or below then you may resume using this refrigerator unit as normal. If not, call unit in for servicing.

      • Observation (CORRECTED DURING INSPECTION): Prep cooler attached to the grill has been broken for approx 2 weeks. Food still being kept in the inserts including cheese. Using ice in another insert underneath however ice almost completely melted and not touching the bottom of the insert. Temperature of the cheese @19C
      • Corrective Action(s): Cheese discarded and discussed proper technique of ensuring small amount of cheese not 3/4 of an insert, to be kept on ice. Kept several inserts of cheese ready to be swapped out in the walk in cooler. Ice must also be still frozen and touching the bottom of the food insert to keep product cold. Temperatures are to be monitored to ensure that ice is adequate to keep the food cold.

      • Observation: Prep cooler attached to the grill has been broken at at room temperature for a couple of weeks. No date given as to when it will be repaired.
      • Corrective Action(s): Ensure a small amount of product including cheese is being kept on ice. Ice to be changed frequently and the rest of the products are kept in walk in cooler to they are not left at room temperature for more than 2 hours. Fix the cooler as soon as possible by Juley 15/23
