    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • ***The chili was 42C - Time was 10:05 (before lunch service at 10:30). Temperature was re-checked after 10:30 and it was 62C. This was good for hot holding but not the reheating temperature. Temperature was checked at 11 and it was not finished reheating. Operator had the product discarded as it had been over 2 hours since they had started the reheating process and new chili was started.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • ***The dishwasher was not sanitizing the dishes. There was no sanitizer present in the final rinse water. There was no hose from the sanitizer pump to the dishwasher (sanitizer was being pumped onto the floor when the dishwasher was run. The disconnected hose was not located behind the machine. Food safety records were checked and it was reported yesterday at 5 the sanitizer concentration for the dishwasher was 100ppm.Discussed with manager and she was instructing the staff to manually sanitize the dishes and equipment in the third sink.
