    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • The floor beneath the deep fryer had visible grease accumulation. This area must be thoroughly cleaned to remove all grease from the floor.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Few pest droppings observed on the floor of the chemical storage room and on one of the shelving. Thoroughly clean and sanitize the area.
    • 34 An operator must ensure that a food establishment is operated so that all food and food ingredients are processed, manufactured, handled, prepared, packaged, served, sold, offered for sale or distribution free of charge, dispensed, displayed and stored in a manner that prevents contamination and adulteration.
      • A cracked egg was observed in the egg case and it was discarded during inspection. The remaining eggs were transferred to a clean egg case by the staff after thoroughly cleaning the remaining eggs.
