      • Corrective Action(s): Sanitizer bucket replaced. Sanitizer line primed and 50ppm chlorine detected at the plate level during the final rinse cycle. Reminder to use test strips to test chlorine concentration on a daily basis.

      • Observation: 1) Potato cutting area is very dirty. Wall-mounted potato cutter has lots of bits of old potato stuck to it. The wall is very dirty, and the cutting board underneath is very dirty. This are must be kept very clean. Note that this area is not being actively used at the time of inspection. Clean thoroughly before using.
      • 2) Knife was stored in the small gap between two prep fridges. DO NOT store knives in this space as it is not easily cleanable.
      • 3) Bar matting for glass storage is stuck to the counter with food/drink debris. Clean bar matting and counter thoroughly.
      • 4) Bar matting on top of glasswasher is on top of an absorbant cloth. The cloth is black in numerous spots with what appears to be mold or mildew growth. Bar matting also sticks to cloth. DO NOT use cloths underneath bar matting as they can harbour bacteria and mold and will contaminate clean dishes.

      • Observation: The following were observed:
      • 1) Tortilla chips were stored in open, uncovered containers in the dry storage as well as on a high shelf by the grill underneath overhead structures. Furthermore the bin by the grill had numerous greasy marks and appeared not to have been washed properly in some time.
      • 2) Fluorescent light fixture in kitchen is not covered, nor are there protective sleeves on the bulbs.
      • 3) a box of raw bacon was stored on a high shelf in the fridge, above several ready to eat foods.

      • Observation (CORRECTED DURING INSPECTION): Glasswasher had no detectable iodine in final rinse, plus the hose from the almost-empty sanitizer bottle leading to the glasswasher was empty. Note that glasswasher was not being actively used at time of inspection. Ensure that glasswasher always has sanitizer in final rinse.

      • Corrective Action(s): Spray bottles were properly labelled during inspection. Use 1 tsp plain domestic chlorine bleach in 1 litre water and make fresh daily.

      • Observation (CORRECTED DURING INSPECTION): Tables are not being sanitized between customers. They are cleaned with an orange detergent. Wiping cloths are dry and are not sanitized.
      • Corrective Action(s): Sanitize wiping cloths and sanitized the dining tables and commonly touched surfaces between customers. An effective sanitizer is 1 tsp domestic chlorine bleach in 1 litre of water to make a 100-200ppm chlorine solution. If using quats sanitizer, use as per label. Follow directions for safe use of all chemicals.

      • Observation (CORRECTED DURING INSPECTION): Prep/line cooler (Beverage Air on right side closer to sinks) has an air temperature above 4 C (9 C air temperature measured) and there is water accumulating on the bottom shelf. There is only a small amount of food in this cooler.
      • Corrective Action(s): Do not store any potentially hazardous foods (fish, meat, poultry, etc.) in this cooler unless it can keep them at 4 C or colder. Thermostat was adjusted during the inspection. Clean cooler. Check temperature daily. Repair if necessary (water on bottom shelf was noted).

      • Observation: There is accumulated food debris/dirt on floor of kitchen. Shelves under bar ice well require cleaning or refinishing.
      • Corrective Action(s): Thoroughly clean kitchen, including floor in hard to reach areas. Clean under bar ice well and re-surface any surfaces that are not impervious to moisture and easy to clean. Add cleaning and sanitizing the ceiling of the ice machine to your cleaning schedule.

      • Observation: Today, operator is away. Both staff advise they have taken Food Safe but more than 5 years ago.
      • Corrective Action(s): Keep copies of all Food Safe certificates on site. Food Safe certificates that are more than 5 years old have now expired and are no longer valid. When the operator is absent, at least one person per shift must have a valid Food Safe certificate.
