    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • *Multiple food products in the walk in cooler was not covered to protect from contamination- tray of Jello and container of mushroom salad. Cover items to protect from contamination. Corrected: Lids were placed onto the uncovered food items during the inspection.*Cross contamination found in the cooler located in the front area. Raw eggs were stored directly on top of bread. Reorganize and ensure raw items are stored below ready to eat food items to prevent cross contamination. Corrected: raw eggs were relocated to the lower shelf during the inspection.
    • 09. Are chemicals stored and handled in a safe manner?
      • Food safe sanitizer was not stored in properly labelled containers. Site was using old food containers. Ensure all chemicals are properly labelled to reflects its content. Corrected: A photo was sent to PHI after inspection showing containers were labelled “sanitizer bucket” with a black marker.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • *Food debris was found in the hand washing sink located in the food preparation area. Clean out sink and ensure sink is only used for hand washing. Corrected: Debris was removed from sink during inspection.*Cups were noted inside the hand washing sink in the front service area. Remove and ensure hand sink are not obstructed for hand washing. Corrected: staff removed the cups.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • *Cleaning and sanitizing required for the following equipment: -juice machine nozzles and hard to reach area behind the nozzles -buildup of sticky residue -fans in the walk in cooler-dust accumulation -dry storage containers lids -debris accumulation -ice machine – mould like substance inside the machine Corrected: Cleaning/sanitizing was completed during inspection for ice machine, fans and dry storage lids. A photo of the juice machine was emailed to PHI after the inspection

    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips for sanitizer were observed to be expired (expiry dates of 2019/2022 were observed). Please ensure testing equipment for sanitizer and disinfectants are available.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Weatherstrip on the bottom of the exterior kitchen door. Repair/replace.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Some areas were observed to be needing attention. What appear to be dust bunnies were observed on the wall above the food prep area. Some common touch areas and storage areas were observed to be needing tidy up.

      • Observed cleaning cloths on food contact surface and quat sanitizer at <200ppm. Corrected during isnpection.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Observed food containers stored directly on the floor in the storage room. Equipment moved to shelf during inspection.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Weatherstrip on the bottom of the exterior kitchen door. Repair/replace.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Observed build up on floor around table/equipment legs, in corners/along walls, fan covers in walk-in cooler, and bottom of mixer. Indicated areas cleaned during inspection.

      • Hot holding thermometer observed in walk-in cooler. Fridge thermometer installed in walk-in cooler during inspection

      • Observed large portion of meat cooling at room temperature. Reviewed ensuring food items are cooled as quickly as possible to limit time in the temperature danger zone. Meat placed in walk-in cooler during inspection.

      • Build up observed behind equipment, in corners and hard to reach areas. Please ensure hard to reach areas are cleaned. Hard to reach areas, under cookline, 2 compartment sink, dishwasher and ventilation canopy.
