    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Cold milk stored at room temperature is a Kinox Koolcore Pitcher. Milk was poured from the container and the milk temperature measured 11 C. The continental breakfast was ending and the milk is to be discarded. Please check the equipment manufacturer's instruction for use and ensure the milk is maintained below four Celsius. Our office would recommend a small glass doored refrigerator for the food service area. The refrigerator would be accessible to clients, more reliable to maintain cold foods below four Celsius and locked when food service is not active.2. Please ensure a food thermometer is onsite for checking displayed and stored food temperatures.
