      • Dirty counter cloths were not immersed in a sanitizing solution between use.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Dishwashing staff not washing hands between handling dirty and clean dishes/items. Please ensure staff wash hands after handling dirty and before clean items.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Chicken breasts measured 48C at room temp. Staff advised they were being cooled. Please practice approved quick-cooling methods. Staff immediately placed chicken into cooler.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The dishwasher final rinse measured 62C. Please manually sanitize all dishes/utensils until dishwasher is repaired and measures 71C at the dish level.
