- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The high temperature type of dishwasher was run 8 times after it was warmed up for about 10 minutes; the final rinse temperatures detected at dish level were at 64C, 65C and 68C. The dishwasher needs to be examined and ensure that a minimum of 71C be obtained at the dish level after each cycle is completed. In the meantime, dishes and utensils can still be washed and rinsed in it but after that they must be manually sanitized in a sink with an approved sanitizing solution such as a 100ppm bleach solution for at least 2 minutes and left air dry.
