      • - Quats D10 sanitizer tested at 100 ppm was being used to sanitize surfaces in the kitchen.*Until the Quats sanitizer issue is resolved, the facility will use Purell Multisurface Cleaner, which was available on-site.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • - The can opener had food debris on it.*Staff cleaned the can opener. Please ensure it is cleaned after each use to avoid the growth of pathogens on equipment.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Some ceiling tiles were damaged and no longer a washable surface.-Please replace damaged ceiling tiles.

      • 1) There was no handwash sink/station in the cooking and food prep area (corner/along the wall).-1 handwash sink on the back area of the cooking line and prep area was serving all food handlers as well as servers.-install a handwash sink on the cooking line during renovations; this will support the cooks and food handlers in this area which will reduce any potential cross contamination issues.

      • 1) The flooring at the entrance to the storage room was deteriorated and lifting; baseboards in this area were water damaged from the previous ice machine.--renovations for the kitchen are scheduled to be started and completed within a couple weeks. 2) Some ceiling tiles were damaged and no longer a washable surface.-replace damaged ceiling tiles

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • 1. There was no chlorine (0 ppm) inside the mechanical dishwasher. Staff replaced the chlorine during inspection. Recommendation for staff to monitor and test the chlorine levels for the dishwasher to ensure dishes are being sanitized daily.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. The evaporator fan inside the walk-in freezer had an accumulation of ice underneath due to a potential leak. Food items were covered in ice. The violation was corrected on the same day.
