- Cream cheese and butter were found on the counter and were promptly moved to the cooler by the staff.Ensure that potentially hazardous foods, such as cream cheese and butter (including salted butter), are always stored at a temperature below 4°C. If left out at room temperature, portion them into smaller containers and discard any remaining product after 2 hours. When refilling the container with a fresh batch, ensure the container is washed, rinsed, and sanitized, or use a new container each time.

- Eggs were found in the basement storage area at a temperature of 10–9°C and were immediately moved to the cooler.Ensure eggs are always stored at a temperature below 7°C. Never leave eggs at room temperature, and discard them if kept at room temperature for more than 2 hours.

The staff promptly moved the items to the cooler.a) Potentially hazardous foods must be thawed quickly or in a way that prevents the rapid growth of pathogenic bacteria.b) Approved thawing methods include:i) Under refrigeration at 4°C (40°F) or below.ii) Completely submerged in cold, running water.iii) As part of the cooking process, provided thawing is factored into the cooking time.iv) Using a microwave.c) If thawing methods cause portions of potentially hazardous food to exceed 4°C (40°F), the total time above 4°C, including cooking, preparation, and cooling, must not exceed 4 hours.
