- Observation (CORRECTED DURING INSPECTION): 1. Melted butter and melted garlic butter placed at room temperature measured at (32.3C and 40.1C) respectively. Operator indicated that it has been sitting for more than 2 hours for the service rush
- 2. Pre-blanched fries placed at room temperature measured at 24.3C. Operator indicated they are placed less than 2 hours
- Corrective Action(s): 1. Butter contains dairy products. All butter and garlic in oil/butter must be kept at <4C at all times. If butter are to placed at room temperature during service rush, a time stamp must be present and left over butter are to be discarded. Operator discarded the butter and garlic butter.
- 2. Operator is to provide time stamp for fries placed at room temperature. No fries should be placed outside to defrost. Operator moved the fries into working cooler at <4C.
