- Observation: 1. Dusty fans in use pointing towards food prep areas.
- 2. Utensils and food placed too closely to hand washing station.
- Corrective Action(s): 1. Clean dusty fans regularly to avoid contamination of food prep areas.

- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: 1) Back walk-in cooler floor along wall under coffee beverage shelves observed with accumulations of food debris along floor wall connection.
- 2) Area below and beside freezer #3 enclosure cavity observed with accumulations of food debris and possibly black mould from migrating spilled water around mop sink.
- 3) Area and lowest shelf at mop sink observed with accumulations of stagnant water. Possibly spreading to adjoining areas as noted. Spray bottle bottoms are contaminated and at risk of cross contamination if placed on food prep surfaces.
- Corrective Action(s): 1 - 3) These areas must be better maintained and kept drier to reduce build up of statgnant water. Clean up more often.
- 3) Mop sink design is not correct and is allowing water to spill into gap beside mop sink and onto lowest shelf. This area may require a corrective re-design to prevent water from spilling into gap. Best solution may be to dry and block off this space if spillage can't be controlled. Plan for corrections.

- Observation: Observed minor build up of food debris in following areas:
- - Back area walk-in cooler in hard to reach areas and along wall;
- - below and around mop sink (accessibility issues from freezer #3 compound water sitting for long periods of time);
- - In the corner by the beverage syrups station;
- - below freezer #4;
- - below cookline in hard-to-reach spots (at legs of equipment).
- May be food sources for variety of pests, or promote a 'creep' of unsanitary conditions.
- Corrective Action(s): Focus on noted areas for more intensive cleaning during schedluled cleaning interval. Clean more often.

- Observation: Internal temperature of cooked onions and other raw proteins and chicken items in the drawer coolers underneath the grill registerd 12-15 degrees C. Onions and mushrooms were discarded during the inspection. Other items were trasnsferred to the walk-in cooler.
- Corrective Action(s): Repair or adjust the drawer coolers to that all food items are maintained at 4 degrees C or below at all times.Do not use these drawers untill they are able to maintain temperature of 4 C or below ( Immediately).

- Observation: Upright freezer (ice cream freezer) registered -9 degree C at the time of inspection.
- Corrective Action(s): Repair or service the upright freezer so that it maintains -18 C or below ( By Dec. 12, 2019).

- Observation (CORRECTED DURING INSPECTION): Noticed condensation water dripping from the fan unit in the walk-in cooler. Also observed some "white flakes" (styrofoam) in the fan grates. The staff on duty cleaned the white flakes at the time of inspection.
- Corrective Action(s): Repair or service the walk-in cooler to look into the water dripping issue. Continue to monitor the fan grates and ensure it is kept clean at all times. A work order was put in by the store manager.
