      • Fridge is operating at 10.5 degrees Celsius. High risk foods were frozen prior to event, kept in the fridge till needed for reheating. Ensure cooler is operating and maintaining a temperature of 4 degrees Celsius or less. Chili is reheated in a hot holding unit. Hot holding units are not designed for cooking and take longer to heat food. Discussed using a hot plate or stove to reheat food quickly to 74 degrees Celsius.
