      • Observation: Fruit fly infestation noted around the mop sink area. Discussed with manager. Light trap and sticky trap installed in area. Staff clean and place hot water down drain. Recommend adding chemical spray in drains and non food wet areas to reduce interest in breeding in these areas.
      • Corrective Action(s): Improve cleaning practices. Target drains with cleaning. Mop sink drain is long and straight. May help to get a drain brush to clean this drain line. Apply chemicals afterwards and if necessary block drain overnight. Foaming drain cleaner also available at home depot or other sources.

      • Observation: Back area of premises in several areas noted with excessive food build up and/or build up of biomat formation:
      • - Arouind grease trap
      • - around hot water tank (tank may be beginning to fail).
      • - Under double sink at floor extending under the shelf in this area;
      • - corners of walk-in cooler.
      • Corrective Action(s): Clean these areas, and make sure daily/weekly cleaning schedules are executed to expected level of cleanliness. Make sure the mop sink and buckets are never left with water and the mop heads are squeezed dry and not left in the sink. Fruit flies love these environments to gather if not breed.
