      • Some food items throughout the facility were stored directly on the ground or without lids/covers. Many prepared items in the walk-in cooler were stored without date labels. - Please ensure all food items are stored off the ground, covered, and labelled to indicate when they were prepared.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1) Many fruit flies were noted at the bar area. - Please consult with pest control company regarding the flies. Ensure area is kept clean and dry. 2) No pest control records available onsite. -Please keep records of all pest control activity conducted.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • *Repeat Violation*Finish is wearing off many of the shelves in the facility including those in the dishwashing area, and those above the prep sink on the cook line. - Ensure all surfaces throughout the facility are smooth and easily cleanable, repair or replace anything that can no longer be adequately cleaned.

      • *Repeat Violation*There was a build-up of food and debris noted in certain areas of the facility. Please clean areas including but not limited to: - Dry storage area- Plate storage shelves on the cook line- Behind equipment on the cook line- Dishracks and Dishwashing area- Hood vents

      • Inserts in the line cooler were double stacked. Top inserts were warmer, around 10C on the surface.- Inserts were moved into the base of the refrigerator. Please ensure all high-risk foods are stored below 4C.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel at the hand sink in the bar was not in an appropriate dispenser. - Please acquire a dispenser that allows you to take a piece of paper towel without contaminating the bulk supply.

      • Wet wiping cloths were left wet on the counter. - Ensure all wet wiping cloths are stored in an approved sanitizer solution or used once then washed. Cloths were moved to a sanitizer solution during the inspection.

      • Raw eggs were stored above ready-to-eat products, such as sauces, in the walk-in cooler.- Move the eggs to the bottom shelf or ensure they are not stored overtop of ready-to-eat foods to protect them from contamination.

      • Most items in the walk-in cooler were date-labelled however, certain items such as cut vegetables and pre-portioned chicken were not. - Ensure all items in the walk-in cooler are date labelled. **Noted 2022-12-14**"Prepared foods in fridges are not being date labelled. Please label sauces, meats, etc. as to when they were prepared."
