    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • Glass mason jars were observed screwed into the bottom of a shelf above food contact surfaces. While this is a creative storage solution, the jars should be replaced with plastic containers, as broken glass could contaminate food contact surfaces.
    • 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
      • The bleach sanitizer for food contact surfaces was measured at 1000 ppm. Food-grade bleach sanitizer for food contact surfaces should be maintained at 100 ppm. The proper mixture is ½ teaspoon of regular household bleach per 1 litre of water. The sanitizer solution should be prepared fresh daily.
