    • 03. Is all food in this facility fit for human consumption and not unwholesome, spoiled, or adulterated?
      • A dented canned food container was noted in the dry storage area. The can was removed and discarded during inspection onsite.Ensure all food items are screened for damage, expiration dates prior to store them in the storage area.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Quats sanitizer concentration in bucket in the prep area was measured 50ppm. The bucket solution was discarded and refilled with fresh sanitizer solution 200ppm.Ensure sanitizer solution concentration is maintained at 200ppm quats, 100ppm chlorine and 12.5 ppm iodine.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Rinse temperature was noted 68.6c and 66.8c of high temperature dishwasher after several attempts. Manual sanitizing procedures in 3 compartment sink after dishwashing were reviewed.Fix the dishwasher and ensure dishes are manually sanitized after being washed in the dishwasher.
