    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Dishwasher struggled to get to proper plate temperature of 71 C. Checked with second thermometer and it was within margin of error for unit, but close. Indicating gauges showed proper temperature.
      • Corrective Action(s): Recommend cleaning and demineralizing the inside of the dishwasher. Focus on the upper spinner as it looked caked with minerals and/or slime deposits which may affect the ability of incoming hot water from booster to get to the plates.
      • Return next week for quick look to verify temperatures are consistently met.

      • Observation: Back stoarge space significantly cleaned up. Minor mouse droppings noted in the back corner. Also noted the baseboard remains chewed away so clearly a mouse access point. This is unchanged from previous inspection.
      • Corrective Action(s): Block off the chewed away gap in baseboard with steel wool or similar. Make sure it is fully stuffed into this space to deter mouse activity in the kitchen.
      • Send pic when work is completed.

      • Observation: Kitchen space generally clean and well organized. Minimal mouse activity noted, however in the back storage room there were mouse droppings noted around legs of shelves. Also chewed away baseboard noted around wired scrubber (steel wool?). Mouse trap and sticky board flipped upside down on floor.
      • Corrective Action(s): Remove traps and clean up floor of sticky residue and mouse droppings in this area.
      • *Recommend cutting away baseboard in this corner as discussed and properly block off access, and then replace baseboard. *Monitor grease trap space for mouse activity and block around grease trap if activity noted.

      • Observation: Storage area floor observed with moderate accumulations of food. Boxes still being stored on floor, preventing easy access to shelves and floor for cleaning.
      • Corrective Action(s): Make sure staff use shelving for all food storage and make sure cleaning staff get to floor under shelves on regular schedule to prevent build up of food debris.

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Drain pipe from single prep sink #1 appears leaking. Bucket with stagnant water observed below pipe. Cupboard below is dirty and mouldy.
      • Corrective Action(s): Fix sink drain pipe as discussed. Clean up cupboard and remove bucket as discussed.

      • Observation: Multiple opened canned foods (high acid tomoato sauces and ketchup etc) used as storage containers.
      • Corrective Action(s): Once opened, store such canned foods in proper containers only. Food and air will cause reaction and potentially contaminating food with metal component of cans such as lead in solder points of cans.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Dry food storage floor under shelves observed with an accumulation of food debris and dust. Obvious there isn't sufficient frequency of cleaning in this area, likely due to the tight space and food products stored on floor. This space is becoming cluttered.
      • Corrective Action(s): Re-organize this space to significantly reduce storage of food on floor and make this area more accessible by:
      • - Purchase one or two free standing food grade institutional bulk food storage containers to fit space beside cooler units as discussed. Must be wheeled to accomodate easy access and mobility.
