- Some contaminated wiping cloths were sitting outside, and the sanitizer solution was not at appropriate concentrations.Staff replaced the sanitizer solution with a new one and placed the contaminated wiping cloths submerged in the sanitizer solution.Ensure used/ contaminated wiping cloths are kept submerged in sanitizer solution and sanitizer is refilled and verified at regular intervals.

The operator indicated the gravy and what appeared to be chili were in hot holding less than 2 hours.Please ensure high-risk foods in hot holding units is maintained at 60 degrees Celsius and above.The operator increased the temperature to above 60 degrees Celsius during the inspection.
