- Observation (CORRECTED DURING INSPECTION): Gravy and beef jus observed cooling at room temperature. Gravy was probed at 60C. Beef jus probed was probed at 52C and was made 1 hour before the inspection.

- - Beef jus was transferred into smaller containers and placed in an ice bath during the inspection.
