- 1. Wrapped prepared sandwiches stored at room temperature above the ice cream freezer. Worker indicated it had been made 5 minutes prior. Moved to a cooler during inspection.2. Prep cooler containing high-risk foods measured around 6.5C. Operator turned it down and the temperature measured below 4C.ENSURE:High-risk foods are not stored between 4C-60C.Cold holding units containing high-risk foods are maintained at 4C or below at all times.

- 02. Is all food in this facility from an approved source and/or properly labelled?
- Some foods in the freezer did not have labels on them including the repackaged meat products, and samosas. Please ensure all foods are labeled to indicate their source.
- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Chlorine sanitizer in the bucket had a concentration of 50ppm. This was corrected during the inspection. Corrected concentration was 100ppm. Chlorine sanitizer concentration must be kept at 100ppm to allow for effective disinfection.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- Soiled, burned towels were observed in the back area. Operator corrected this and discarded them during the inspection.Please ensure that towels are replaced routinely as needed to prevent food contamination.
