      • The mechanical dishwasher monitor has been repaired and is now displaying temperatures; however, the dishwasher is not reaching the minimum required sanitizing temperature. The dishwasher was run three times, and during each cycle the final rinse temperature only reached 119°F. A functioning temperature display is critical for verifying that sanitizing temperatures are achieved. A high-temperature mechanical dishwasher must reach a minimum of 180°F (82°C) for at least 10 seconds during the final rinse to properly sanitize customer reusable dishes and utensils.Until the dishwasher is fully repaired and verified to reach sanitizing temperatures, all reusable dishes and utensils must be sanitized manually using the three-compartment sink. Items must be fully immersed in a sanitizing solution for a minimum of two minutes to achieve effective sanitization and prevent the transmission of communicable diseases. The sanitizer concentration must be verified using appropriate test strips, with QUAT sanitizer maintained at 200 ppm.
