    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • At time of inspection:1. There did not appear to be a sufficient quantity of sanitizer within this facility (i.e. to sanitize all dishware / utensils / food contact surfaces).2. There did not appear to be any chemical test strips available to verify the concentration of the chemical sanitizer that is being used within this facility.The owner / operator of this facility is requested to conduct the following, namely:1. Obtain an approved chemical sanitizer. Mix sanitizer based on the manufactuers requirements.2. Obtain chemical test strips (for the chemical that is purchased) to verify that the concentration meets the manufacturer's requirements. If obtaining a quaternary ammonia sanitizer, the concentration should be between 200 PPM to 400 PPM.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • At time of inspection:1. The cutting boards (colored) noted were not in good repair and require replacement. There appeared to be severe scratches / stains on both boards noted.The owner / operator of this facility is requested to conduct the following, namely:1. Replace all colored cutting boards to ensure a scratch, stain-free, and smooth surface. Also please note that wooden cutting boards are not recommended to be used for cutting / processing raw meat.
