      • Observation: 1) Found mice droppings accumulated on the floor, metal racks and the wood ceiling joists (kitchen floor) in the basement along the wall below the stairs & kitchen. Droppings carry diseases and they also indicate high activity and an entry point.
      • 2) Found pieces of foam that was gnawed by rodents by the compessors in the basement. Rodents are gnawing at the foam in the ceiling. This is an indication of high activity and an entry point into the premises.
      • Corrective Action(s): 1) Clean up the droppings today and sanitize any surface that came into contact with the droppings with a bleach and water solution. This shall be done daily, to determine the activity of the ordents. Block openings with metal plates or metal mesh (1/4" or smaller), or tightly stuff holes with steel wool. Inform your pest company of this area so they can trap more aggressively in this area.

      • Observation: Rodent droppings found in the basement on the floor under the metal racks storing cleaning chemicals. Droppings carry pathogens.
      • Corrective Action(s): Immediately clean up the droppings and wash & sanitize all surfaces that came into contact with the droppings. Ensure staff are cleaning under these metal racks DAILY to remove any droppings. This will help determine how active and the size of the problem.

      • Observation:
      • Mice droppings found on the floor in the upstairs walk-in-cooler, and in the basement around the ice machine; hot water tank; on and beneath food racks; and on the outside of food containers. Mice and their droppings carry diseases.
      • Corrective Action(s):
      • The following actions shall be taken to eliminate the mice problem:
      • 1) Inspect all food storage and processing areas every morning for droppings. Clean up all droppings immediately and sanitize the surfaces.
      • 2) Start a book to log areas where mice and their droppings have been seen or found.
      • 3) Have the pest technician read the book, when they service the premises, so they know where mice activity is occurring.
      • 4) Block the holes found at the base of the beam, in the kitchen by the hand washing sink.
      • 5) Have the pest technician inspect the exterior surroundings of the building and the roof for entry points. Block all entry points with metal plates or stuff holes with steel wool and seal with expanding foam.

      • Observation (CORRECTED DURING INSPECTION):
      • Aluminum foil and cardboard were lining shelves and surfaces. These surface have food/grease on them and will attract pests.
      • Corrective Action(s):
      • The aluminum foil and cardboard must be removed every night, and new material shall be installed in the morning to ensure there is no food source for pests. At time of the inspection, head kitchen staff agreed to the change.

      • Observation (CORRECTED DURING INSPECTION):
      • Observed plastic food container lids that had cracks and chips in them. Pieces of plastic could fall/chip into food and/or bacteria will grow in the cracks.
      • Corrective Action(s):
      • Inspect all food containers for damage. Discard all broken, chipped, cracked or damaged container and lid. Purchase new ones. At time of inspection, staff discarded items.

      • The upstairs keg/bar cooler floor is damaged. It is difficutl to clean as there are uneven surfaces.

      • Observation: Low temp dishwasher is not dispensing any chlorine.
      • Corrective Action(s):
      • 1) Call your repair technician.
      • 2) Until it is repaired, manually add a capful of household bleach into the reservoir with every load. Test the concentration of chlorine frequently. This is only a temporary measure.
      • 3) Continue to ensure that the tubes are free of food debris and test sanitizer concentration regularly..
