    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Meat dish with sauce was measured at around 52C using an IR and probe thermometer. Instructed operator to quickly reheat food using burner to at least 74C. Ensure all hot foods are kept at 60C or above at all times. The food was then reheated on site using a burner setup.
