- Operator was informed that all cooking must be done at the event.- One product of baked red bean paste mooncake was left at room temperature and was provided multiple information of where it came from. - Due to the uncertainty and being left out at room temperature, operator was instructed to remove the product and not to be sold at the vendor.
- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1. Operator had a bottle of caviwipe and used it on a rolling pin during the inspection to demonstrate how they sanitize. - Operator was instructed not to use caviwipe as it is not a food safe sanitizer and to acquire a diluted bleach water solution. Operator was able to provide and test the solution.- Rolling pin that was wiped with caviwipe was also instructed to be rewashed and sanitized to remove any potential chemical residue of caviwipe.2. No sanitizer test strips available. - Operator was able to later acquire test strips and test sanitizer solution.

- No food-grade sanitizer available during the time of the inspection.A food-grade sanitizer must be available to ensure food contact surfaces are adequately cleaned and sanitized to mitigate the risk of food contamination. Reinspected that same day and the operators obtained a bleach sanitizer solution and measured 200ppm.
