    • 18. NO EVIDENCE OF RODENT OR INSECT OUTER OPENINGS PROTECTED/RODENT PROOFED, A WRITTEN LOG SHALL BE MAINTAINED AVAILABLE TO THE INSPECTORS
      • All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. REAR EXIT DOOR IS NOT RODENT PROOF. OBSERVED A 1/4" GAP ALONG THE BOTTOM OF THE DOOR. MUST RODENT PROOF THE DOOR. SERIOUS VIOLATION 7-38-020.
    • 19. OUTSIDE GARBAGE WASTE GREASE AND STORAGE AREA; CLEAN, RODENT PROOF, ALL CONTAINERS COVERED
      • The area outside of the establishment used for the storage of garbage shall be clean at all times and shall not constitute a nuisance. OBSERVED 10 RAT DROPPINGS ON THE GROUND AROUND THE DUMPSTER. MUST CLEAN AND MAINTAIN THIS AREA. ALSO OBSERVED EXCESSIVE GARBAGE OVERFLOWING OVER THE TOP OF THE DUMPSTER. MUST HAVE ADEQUATE GARBAGE PICKUP TO MAINTAIN GARBAGE AREA CLEAN SO THAT DUMPSTER LID CAN BE CLOSED. SERIOUS VIOLATION 7-38-020.
    • 24. DISH WASHING FACILITIES: PROPERLY DESIGNED, CONSTRUCTED, MAINTAINED, INSTALLED, LOCATED AND OPERATED
      • MUST PROVIDE SANITIZER AND DISH DETERGENT TO WASH AND SANITIZE UTENSILS.
    • 32. FOOD AND NON-FOOD CONTACT SURFACES PROPERLY DESIGNED, CONSTRUCTED AND MAINTAINED
      • All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST INSTALL A SPLASHGUARD BETWEEN THE HANDSINK AND THE 3 COMPARTMENT SINK. MUST PROVIDE SHELVING FOR THE BOXES OF STOCK IN THE STORAGE AREA.

      • All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE VENTILATION FAN IN THE RESTROOM.

      • The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. REMOVE THE WOOD ON THE FLOOR UNDERNEATH THE GREASE TRAP.
    • 40. REFRIGERATION AND METAL STEM THERMOMETERS PROVIDED AND CONSPICUOUS
      • All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST PROVIDE A THERMOMETER INSIDE OF ALL COOLERS.
