      • Surface sanitizer must be made as per manufacturer's instructions (Quats at 200 ppm).

      • Pest control services are in place - follow recommendations provided by pest control company.

      • Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (cheese, paneer, cut vegetables) in top inserts of 3 door prep cooler ranging from 4-8 C.
      • Corrective Action(s): Lid was closed and the internal temperature of foods dropped.Paneer was in a warm spot of the cooler so was re-located to walk-in cooler.

      • Observation: 3 door prep cooler has some hot spots and some cold spots. Inserts in the centre area are not reaching a temperature of 4 C or below.
      • Food in top inserts were ranging from 4-8 C.
      • Bottom section of cooler was at 5 C at the start of inspection and then 6.5 C at the end. Bottom section only used for the storage of dough.
      • Corrective Action(s): Repair cooler if necessary or adjust temperature setting or do not use centre area for storing potentially hazardous foods.
      • Foods (paneer) at 8 C were transferred to walk-in cooler.
      • Covers were placed on inserts and temperature of food had dropped. Keep lid on when not in-use/during slow periods.
