- Observed a significant accumulation of food debris and grease on/around cooking equipment (e.g. - deep fat fryer and under the stove) and also under/around the mechanical dishwasher.Moreover, there is a number of pieces of cardboard lining the floor underneath these areas and it appeared that the cardboard had not been recently replaced.As discussed with the operator, the level of cleaning/housekeeping is currently inadequate and more thorough cleaning is required throughout the kitchen.Once completed, the operator will take photographs of the completed cleaning and email back to our Department for our final review/approval.
