      • All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST DETAIL CLEAN INTERIOR OF ALL FRYERS AND OTHER COOKING EQUIPMENT AND REMOVE ALL GREASE AND FOOD DEBRIS. ALSO CLEAN THE HOOD OVER COOKING EQUIPMENT AND THE INTERIOR OF ICE MACHINE.

      • The walls and ceilings shall be in good repair and easily cleaned. MUST DETAIL CLEAN WALLS IN PREP AREA AND REMOVE FOOD DEBRIS. ALSO REPAIR OPENINGS IN WALLS UNDER 3 COMPARTMENT SINK AND UNDER DISH MACHINE.
