INSTRUCTED TO PROVIDE PROOF OF A CDPH APPROVED HACCP PLAN FOR BOTH VACUUM PACKAGING AND SOUS VIDE. MANAGER VOLUNTARILY DISCARDED AND DENATURED 46LBS OF FOOD VALUED AT APPROXIMATELY $500. THE CRYOVAC AND SOUS VIDE MACHINES WERE FOUND ON THE 1ST FLOOR IN THE PREP AREA AND ARE TAGGED HELD FOR INSPECTION. SERIOUS VIOLATION 7-38-005(A)
