    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • One refrigerator (middle) initially slightly warm (5-6C), however, when turned down, was maintaining 3C- good. Ensure fridges provided with thermometers and checked regularly.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Ensure a min/max thermometer is provided to verify that the rinse cycle on the dishwasher is reaching required sanitizing temperature (minimum temperature at plate level is 71C, usually this is achieved when rinse temperature reaches 82C/180F on dishwasher dial).
