    • Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
      • The internal temperature of foods probed in the front area prep cooler was approximately 8C. Ambient temperature was also above the regulated standard of 4C.
      • The operator adjusted the temperature and the cooler is now within acceptable range.
    • Food Not Protected - General
      • Wiping cloths used for cleaning were kept outside sanitizer solution.
      • Ensure the following: - all wiping cloths are kept fully immersed when not in immediate use, and, - all QUATs sanitizer is mixed to manufacturer concentration of 200-400 ppm. Timeline: Immediate Comments A routine inspection was conducted. One of the prep cooler fridges was elevated in temperature. Ensure to continue to monitor this and report to our office if the issue occurs again. Two fridges have been added. The addition of these coolers is acceptable. Provide an updated floorplan to reflect the current floorplan. Action items: * Ensure all logs are maintained as per the food safety plan as some days have not been completed. Ensure the sanitizer/dishwasher logs are also completed. * Ensure fly strips are are removed from any area where food may be found (even transported between areas). * Ensure the walk in cooler door is cleaned. * Unsealed wood is still present; however, the operator has obtained the replacement metal components. Ensure this wood is either sealed or repaired to create a non-absorbent surface. * Ensure if the door is left open that a screen door is installed to prevent the entry of pests. * The bar is not currently in use. Ensure the bar hand sink is equipped with soap and paper towel. Comments: - The chlorine dishwasher had 50-100 ppm sanitizer. - Overall sanitation and organization were satisfactory. - The food safety and sanitation plans were available. - Food safety trained staff were onsite.
