      • Wall behind three-compartment sink faucet is in disrepair and no longer smooth, non-absorbent or easily cleanable. Repair wall.

      • Hand sink is in disrepair due to a plumbing issue. Repair hand sink. Employees are currently utilizing three-compartment sink for hand washing, equipped with liquid hand soap and single-use paper towel.

      • All shelving must be at least 6 inches off the floor to protect food/equipment from pests and to facilitate proper cleaning of the floor.

      • No paper towel dispensers available at the kitchen hand wash sink and the bar hand wash sink. Paper towel dispenser is required to protect paper towel from contamination and to facilitate proper handwashing practices. Install paper towel dispensers at the hand wash sinks.
    • 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
      • Food handler was unable identify an approved food grade surface sanitizer. Unscented household bleach was available on-site. Discussed proper mixing procedure for bleach sanitizer (1/2 teaspoon unscented household bleach for 1 litre of water).
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Rodent dropping were observed in the following areas: on the floor by the broom storage, on the floor under the back storage table, on the floor under the rack shelf by the hand wash sink, on the floor under the prep table opposite to the dish washer and under the floor under the waffle station. Clean and sanitize all the areas affected by rodent droppings.
    • 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
      • Chemical spray bottles observed with no labels. Chemicals removed from original containers must be clearly labelled to identify contents. Chemical spray bottles were labelled at the time of inspection.
    • 35(1) If directed by an inspector, a food establishment must have a quality assurance system in place that identifies, implements, monitors and verifies critical factors in the processing and preparation of food and that effectively prevents contamination or adulteration of food and ensures food safety.
      • Oyster tags are not maintained on-site. Oyster tags allow the oysters to be tracked back to their suppliers and source of water. Maintain oyster tags for a period of 90 days.
    • 35(1) If directed by an inspector, a food establishment must have a quality assurance system in place that identifies, implements, monitors and verifies critical factors in the processing and preparation of food and that effectively prevents contamination or adulteration of food and ensures food safety.
      • Refrigeration, freezer and dishwasher final rinse temperature logs are not maintained. Refrigeration, freezer and dishwasher final rinse temperature logs must be completed once daily. Logs must be maintained on-site for review by the Public Health Officer.
    • 8(2) A permit must be posted in a conspicuous location in the food establishment.
