- 1) Open display cooler was measured between 8.0 to 14.0 degrees C. Move chicken into the close cooler. Store all perishable food at 4 degrees C or below. 2) No probe thermometer. Provide a probe thermometer to monitor the chicken.

- Dishes are not being sanitized properly. Staff just spray the sanitizer on the trays. Dishes need to submerge in the sanitizer for 2 minutes before air drying.
