      • The high temperature dishwasher was showing a low rinse temperature warning on the machine screen. The temperature was checked with a thermometer and was 69°C-70°C at the dish level.Discussed using the three-compartment sink manual dishwashing method if the dishwasher does not reach adequate sanitizing temperatures.

      • 1. Used cleaning cloths were not being stored in a sanitizer solution. Cleaning cloth was observed on the kitchen counter.2. The concentration of chlorine sanitizer solution in a spray bottle was measured to be at 0ppm.Fresh 100ppm chlorine sanitizer solution was prepared in a bucket and spray bottle during inspection and the cleaning cloth stored in the sanitizer solution bucket. Please ensure used cleaning cloths are always stored in a sanitizer solution when not in use.

      • Chlorine test strips were not observed.Please obtain chlorine test strips.
