  1. Risk Management Inspection

    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There were no test strips present on site during the inspection. Facility has pool chlorine test strips. Food grade sanitizer test strips need to be used and bought. Test strips have been placed on order.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The double door cooler near back entrance measured 10C. Staff were instructed to remove potentially hazardous foods to another cooler. Please repair. Cooler has been repaired. Temperature measured 3.3C at time of inspection. This cooler needs a thermometer. The cold beverage cooler that stores the milk in the front needs a thermometer. Staff had sauces out at room temperature for >2 hours at a time. Sauces were discarded at time of inspection. Discussed only taking small amounts out for a short period of time. Otherwise, keep sauces in the cooler or discard product at the 2 hour mark.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • There was a gap on the bottom of the backdoor allowing outside light to pass indoors. Pests can easily gain entry inside. No pest control plan was in place.A pest control monitoring checklist will be provided to the operators. A cleaning schedule template will be provided with report. Please use.
