      • Paper towel dispenser in the pastry kitchen was initially blocked with a stand mixer. - Mixer was moved, please ensure hand sink and paper towel are always accessible so staff can adequately wash their hands.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Some small flies were observed in the kitchen. - Please consult with pest control operator to control the flies.

      • There was a sticky fly trap hung up over food prep table. - Fly trap was moved, please ensure these are not hung over top of food to protect food from contamination.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Lemon zester was stored dirty on a shelf. - Please clean this utensil, ensure all utensils are cleaned and sanitized at the end of the night and not stored dirty.

      • The smaller mixer and some food products were stored underneath the paper towel dispenser in the pastry kitchen. - Move these items so that they are not contaminated when staff uses the paper towel.

      • The paper towel dispenser in the pastry kitchen was out of paper towel. - Please ensure this dispenser is stocked with paper towel.

      • The ceiling tile above the side door is damaged and peeling. - Repair or replace this tile, ensure the ceiling is smooth and cleanable.
